In River Rafting

guides and lunch spread by riverIf you’ve been on our Nizina Raft and Flightsee Trip, chances are the guides uncovered some homemade Salmon Salad to enjoy at lunchtime. A staple with our rafting lunch, the guides at Copper Oar have certainly honed in the recipe over the years, and we thought we’d share it with your guests!

Warning – this recipe is very vague – we like each guide to find their own particular style/taste, so there’s a lot of wiggle room built in. Get all the ingredients for yourself and experiment at home or on your next camping trip!

Ingredients:

  • Canned Salmon (1 can will feed approx. 2-3 people)
  • Mayonnaise
  • Relish
  • Mustard (we prefer Spicy Brown!)
  • Salt
  • Pepper
  • Optional additions: Celery, Dill (fresh or dried), Garlic Salt

Directions:

Open the cans of salmon and drain. Mix all ingredients in a mixing bowl with a fork (we tend to use more mayonnaise than relish, more relish than mustard, etc…, so you’re encouraged to experiment with quantities of each ingredients). Serve up on your favorite sandwich, crackers, or on top of a fresh salad of greens!
